When i've seen mediums work in the churches they seem to sip lots and lots of water is it just thirsty work or is there more to it?

There is more to it!!!
Mediums actually become warmer whilst they work and dehydrate.
I have been told by some that the water helps them keep their connection, but am dubious about this.

Yes--but spirit is NOT conductive! It is a force an energy but defo NOT electrical!

Yes, I have noticed this,Peter. I once asked a medium why they seem to sip small glasses of water and also noticed the jug of water placed ready for them on the table before they start giving messages.
Somes messages are given in a quick form,medium speaking very quickly.
I have attended an open circle in another site and we are always instructed to have water with us before giving any messages.

Its a HUGE on HUGE energy drain that one has. A big part of that is dehydration. One's nerves are at times running a bit higher and one is doing a lot of rapid talking at times. I know that me mouth is what dries out. Water too is a conductor as most of the Spirit contacts one gets is in one's Bathroom ( but most dont want to talk on that ) .
